Course Description
The unit set HLTSS00061 – Food Safety Supervisor (Community Services & Health Industries) – is designed to provide individuals with the essential skills and knowledge to oversee food safety practices in community services and healthcare settings. This course is critical for workers responsible for managing food safety in environments such as aged care facilities, hospitals, childcare centres, and community kitchens, where vulnerable populations are at a higher risk of foodborne illness.
Throughout the course, participants will learn how to apply and monitor food safety standards, identify potential hazards, and implement control measures to ensure food is handled, prepared, and stored safely. The training covers personal hygiene practices, cross-contamination prevention, safe food storage, and temperature control, tailored to the specific needs of healthcare and community service environments. Participants will also develop the skills to supervise staff, conduct risk assessments, and ensure compliance with food safety regulations in line with industry standards.
Upon completing HLTSS00061 – Food Safety Supervisor (Community Services & Health Industries), participants will be qualified to act as Food Safety Supervisors, ensuring that food is safely prepared and served to protect the health and well-being of clients and patients. This training is essential for maintaining high food safety standards and regulatory compliance in care and health-related environments.
This Skill Set is particularly designed for workers that supervise food preparation and meal distribution to vulnerable people such as the elderly, children and babies, pregnant women, people with medication conditions, immune deficiencies and/or allergies primarily. These staff often work in Early Childhood, Aged Care, Disability Support, Respite Care, Community and Home Care, Meals on Wheels, Maternity hospitals, Psychiatric hospitals, Same day establishments for chemotherapy and rental dialysis services and Hospital Catering. The legislation states:
“Food businesses that process or serve potentially hazardous food for hospital patients, aged care recipients, children in child care centres and vulnerable people receiving other services will generally fall within the requirements of this Standard, provided the food is intended for six or more vulnerable persons. This Standard also applies to delivered meals organisations that process potentially hazardous meals intended for six or more vulnerable persons.”
The HLTSS00061 Food safety supervision skill set – for community and health industries stands alone and incorporates the content of the following units:
- HLTFSE001 Follow basic food safety practices
- HLTFSE005 Apply and monitor food safety requirements
- HLTFSE007 Oversee the day-to-day implementation of food safety in the workplace
*IMPORTANT: A NSW FSS certificate will not be issued upon completion of this Skill Set. If you work in NSW and require a NSW FSS Certificate, we recommend you complete the NSW Food Safety Supervisor course.

Course Delivery
This course can be delivered/assessed fully online, in the workplace or at facility organised by the training provider.
When this course is delivered fully online the practical skills and knowledge of food safety procedures are completed through the third-party observation form. Students must either be employed or secure a volunteer position at a workplace that will provide a third-party observer. This observer is responsible for witnessing and documenting the student's demonstrations using Allens Training third-party report form.
Entry Requirements
An individual undertaking this course with Allens Training Pty Ltd will need to demonstrate the following to be eligible for entry:
- Physical capability to be able to meet the demands of the practical demonstration skills
- Visual acuity to identify food hazards as well as clean and sanitise equipment and materials
- Follow personal hygiene requirements including wearing appropriate flat, enclosed, rubber soled shoes for comfort and safety, long hair should be tied back and all unnecessary jewellery removed.
Please note: If your role does not involve working with vulnerable people but you are required to complete a Food Handler or Food Safety Supervisor course, the following Skill Set may be more applicable to your needs SITSS00069 - Food Safety Supervision Skill Set which includes the following units:
- SITXFSA005 Use hygienic practices for food safety
- SITXFSA006 Practice in safe food handling practices
IMPORTANT: A NSW FSS certificate will not be issued upon completion of this Skill Set. If you work in NSW and require a NSW FSS Certificate, we recommend you complete the NSW Food Safety Supervisor course.
Online study options: The online learning program can be found in the student portal. Students must have access to a computer, smart phone, tablet or other electronic device with access to the internet to complete the online studies and practical assessment.
Fully Online Option: Students must either be employed or secure a volunteer position at a workplace that will provide a third-party observer. This observer is responsible for witnessing and documenting the student's demonstrations using Allens Training third-party report form.

Assessment Requirements
Individuals undertaking this course will be expected to complete both written and practical assessment tasks. These are detailed in the Assessment Activities section.
Certificate Renewal Requirements
The Food Standard 3.3.2A mandates that the Food Safety Supervisor certificates (HLTSS00061 Food Safety Supervision Skill Set - For Community Services and Health Industries) must be renewed every five years from the date of completion

- Use two (2) different monitoring methods to identify unsafe food items
- Identify two (2) unsafe food practices and implement corrective action
- Communicate food safety requirements to two (2) new employees • Identify two (2) food safety breaches, update the relevant procedure, and communicate the changes to colleagues
- Investigate two (2) food safety complaints, implement appropriate corrective controls and communicate the changes to colleagues

Theory assessment - A written assessment consisting of multiple choice and short answer questions. All questions must be completed.
