Course Description

The unit set SITSS00069 – Food Safety Supervisor (Hospitality, Transport & Distribution) – equips individuals with the skills and knowledge required to manage and maintain food safety standards in the hospitality, transport, and distribution sectors. This course is critical for those responsible for overseeing food safety in settings such as restaurants, cafés, catering services, food trucks, and transport or distribution hubs handling food products.

Throughout the course, participants will learn how to implement and monitor food safety programs, ensuring compliance with food safety regulations. The training covers key areas such as personal hygiene, cross-contamination prevention, safe food storage and handling, and temperature control, which are vital in both hospitality and food transport settings. Participants will also develop skills in supervising staff, conducting risk assessments, and ensuring that food safety practices are consistently followed throughout the supply chain or food service operation.

This course is ideal for managers, supervisors, and staff involved in food preparation, storage, transport, or service in the hospitality and food distribution industries.

Upon completing SITSS00069 – Food Safety Supervisor (Hospitality, Transport & Distribution), participants will be qualified to act as Food Safety Supervisors, ensuring food is handled, stored, and served safely and in compliance with food safety laws. This training is essential for maintaining high standards of food safety across hospitality, transport, and distribution environments.

The SITSS00069 Food Safety Supervision Skill Set stands alone and incorporates the content of the following units:

  • SITXFSA005 Use hygienic practices for food safety
  • SITXFSA006 Participate in safe food handling practices

Please note: If your role involves working with vulnerable people and you are required to complete a Food Handler or Food Safety Supervisor course, HLTSS00061 Food safety supervision skill set – for community and health industries which includes the following units may be more applicable to your needs:

  • HLTFSE001 Follow basic food safety practices
  • HLTFSE005 Apply and monitor food safety requirements
  • HLTFSE007 Oversee the day-to-day implementation of food safety in the workplace  

 

IMPORTANT: A NSW FSS certificate will not be issued upon completion of this Skill Set. If you work in NSW and require a NSW FSS Certificate, we recommend you complete the NSW Food Safety Supervisor course.

Additional Information

This course can be delivered/assessed fully online, in the workplace or at facility organised by the training provider.

When this course is delivered online, the practical skills and knowledge of food safety procedures are completed through the third-party observation form. Students must either be employed or secure a volunteer position at a workplace that will provide a third-party observer. This observer is responsible for witnessing and documenting the student's demonstrations using Allens Training third-party report form.

Course durations can vary for multiple reasons, so the durations below are the minimum possible amount.

Refresher Face to Face contact time of at least 8 Hours
Face-to-Face Face to Face contact time of at least 11 Hours
Online with face-to-face assessment Face to Face contact time of at least 2 Hours
Fully Online - It is expected students may complete the course within 5-6 hours (depending on experience levels) This can be completed over a number of sessions. Your course progress will be saved.

When completing the course fully online Students are expected to complete all learning and assessment activities within six (6) months of enrolment. Failure to complete all requirements may result in your enrolment being disabled/cancelled.

An individual undertaking this course with Allens Training Pty Ltd will need to demonstrate the following to be eligible for entry:

  • An official form of photo identification (e.g., driver’s licence, passport, or student ID). 
  • Visual acuity to identify food hazards as well as clean and sanitise equipment and materials
  • Follow personal hygiene requirements including wearing appropriate flat, enclosed, rubber soled shoes for comfort and safety, long hair should be tied back and all unnecessary jewellery removed.

Online learning: Students must have basic digital literacy skills to navigate online platforms, complete assessments, and access course materials. Before enrolment, students should assess their ability to engage in online learning. Support is available where required. The online learning program can be found in the student portal. Students must have access to a computer, smart phone, tablet or other electronic device with access to the internet to complete the online studies and associated assessment tasks.

Delivery mode: Online with face-to-face The online pre-course learning and theory assessment is expected to take approximately 7-8 hours to complete. These timeframes are estimates. Individuals with prior experience in similar training may complete the online component in less time, while those new to the subject may need more time to complete all the learning content and theory questions

Please note: If your role involves working with vulnerable people - such as the elderly, children and babies such as in childcare, pregnant women, people with medication conditions, immune deficiencies and/or allergies – the HLTSS00061 Food safety supervision skill set - for community services and health industries may be more applicable to your needs.

 

IMPORTANT: A NSW FSS certificate will not be issued upon completion of this Skill Set. If you work in NSW and require a NSW FSS Certificate, we recommend you complete the NSW Food Safety Supervisor course. 

Individuals undertaking this course will be expected to complete both written and practical assessment tasks. These are detailed in the Assessment Activities section.

The Food Standard 3.3.2A mandates that the Food Safety Supervisor certificates (SITSS00069 - Food Safety Supervision Skill Set) must be renewed every five years from the date of completion.

Performance tasks and practical scenarios:

  • Follow hygiene procedures 
  • Prevent food contamination
  • Report unsafe hygiene practices
  • Calibrate a probe thermometer to ensure accuracy
  • Demonstrate how to manage safe food handling practices at the following critical content points – receipt, storage, preparation, processing, display, packaging, transporting and disposal
  • Follow procedures to report incidents of food contamination

For fully online delivery mode

Students are required to complete a self evaluation against the following core skills as part of the enrolment process. This will allow your trainer to understand any additional support that may be required during the course delivery and assessment.

Learning

I can learn how to handle and store food safely by following instructions and remembering key steps, such as keeping food at the right temperature and being aware of allergens.

Reading

I can read and understand labels on food packaging and cleaning products, as well as storage requirements

Writing

I can write short notes or checklists to help keep track of food safety steps, like recording food storage or keeping temperature logs.

Oral Communication

I can remind someone of simple food safety rules, like washing their hands, using clean utensils, or wiping down benches.

Numeracy

I can use basic maths to check temperatures, follow time guidelines, and measure ingredients accurately.
