Course Description

The unit SITXFSA006 – Participate in Safe Food Handling Practices – equips individuals with the essential skills and knowledge to safely handle food in environments such as hospitality, healthcare, aged care, childcare, and food service industries. This unit is critical for workers involved in preparing, serving, or handling food to ensure compliance with food safety standards and protect against foodborne illnesses.

Throughout the course, participants will learn about the key principles of food safety, including proper hygiene practices, safe food storage, temperature control, and preventing cross-contamination. The training covers how to follow organisational food safety procedures, identify potential hazards, and ensure compliance with regulatory requirements. Participants will also gain an understanding of how to maintain cleanliness in food preparation areas and handle food in a manner that ensures safety for both consumers and staff.

This unit is ideal for food service workers, kitchen staff, and anyone involved in food preparation or handling across various industries.

Upon completing SITXFSA006, participants will be able to confidently participate in safe food handling practices, contributing to a hygienic and compliant food service environment. This training is essential for maintaining food safety standards and protecting the health of customers and clients.

SITXFSA006

Participate in safe food handling practices

This course can be delivered/assessed in the workplace or at facility organised by the training provider.

Course durations can vary for multiple reasons, so the durations below are the minimum possible amount.

Refresher Face to Face contact time of at least 5 Hours
Face-to-Face Face to Face contact time of at least 8 Hours
Online with face-to-face assessment Face to Face contact time of at least 1 Hour 30 Mins

An individual undertaking this course with Allens Training Pty Ltd will need to demonstrate the following to be eligible for entry:

  • Physical capability to be able to meet the demands of the practical demonstration skills
  • Visual acuity to identify food hazards as well as clean and sanitise equipment and materials
  • Follow personal hygiene requirements including wearing appropriate flat, enclosed, rubber soled shoes for comfort and safety, long hair should be tied back and all unnecessary jewellery removed.

Please note: This course has been designed for people who have already completed SITXFSA005 Use hygienic practices for food safety (Level 1 Food Handlers course). Whilst SITXFSA005 Use hygienic practices for food safety is not a pre-requisite, it is recommended that you complete that course prior to commencing this unit.  Some basic food handling and hygiene procedures covered in the SITXFSA005 Use hygienic practices for food safety will not be covered in detail in this unit. If you have not completed SITXFSA005 Use hygienic practices for food safety and need to complete SITXFSA006 Participate in safe food handling practices, you may like to consider completing SITSS00069 Food Safety Supervision Skill Set which includes both units, SITXFSA005 and SITXFSA006.

IMPORTANT: A NSW FSS certificate will not be issued upon completion of this Skill Set. If you work in NSW and require a NSW FSS Certificate, we recommend you complete the NSW Food Safety Supervisor course.

Please note: If your role involves working with vulnerable people - such as the elderly, children and babies such as in childcare, pregnant women, people with medication conditions, immune deficiencies and/or allergies - the following units may be more applicable to your needs:

  • HLTFSE001 Follow basic food safety practices
  • HLTFSE005 Apply and monitor food safety requirements
  • HLTFSE007 Oversee the day-to-day implementation of food safety in the workplace

Individuals undertaking this course will be expected to complete both written and practical assessment tasks.

This certificate does not require renewal

Performance tasks and practical scenarios:

  • Calibrate a probe thermometer to ensure accuracy
  • Demonstrate how to manage safe food handling practices at the following critical content points – receipt, storage, preparation, processing, display, packaging, transporting and disposal
  • Follow procedures to report incidents of food contamination

Documentation

  • Thermometer Calibration Log
  • Food receipt
  • Log for 2-hour/4-hour rule
  • Cleaning and sanitising record

Theory assessment: A written assessment consisting of multiple-choice and short answer questions.
